drinking. In this section you will find the typical natural
produce and some recipes which have made this region unique
and famous in the world.

    Our recipes...
Among the natural produce of our area there is wine and  
cheese but the protagonist is the extra virgin oil. Our
farms produce also saffron, jams and conserves and the  
garden products which are the main ingredients of the dishes
you'll taste in our Farmhouse.
   
     
  Lamb of Pomarance
     
The breed of lambs reared in the region
has special characteristics which derive
from the territory made of low and high hills.  
The lamb is reared in the area known as  
Comunità Montana of the Upper Cecina Valley .  
  Many cooking events and feasts are dedicated  
Montecastelli IGT Wine  
to dishes which have this meat as ingredient.
 
       
Wine of Montecastelli IGT (Protected Geographic indication)  
The denomination extends to the internal area of the  
province of Pisa and the communes of Volterra, Pomarance and  
Montecatini Val di Cecina. It refers to the production of  
species of grapes such as sangiovese, canaiolo, ciliegiolo,  
trebbiano and vermentino. They are used to make both red  
and white wines as well as for the production of blends  
which come from different grape varieties    
       
 
 
 
Olive Oil
   
Olive oil is one of the main component of the Meditterranean diet, properly processed it preserves the
vitamins, the aroma and the flavour of olive fruit. It is recommended as a condiment for salad, to prepare
some sauces such as mayonnese or vinagrette, or with slices of roasted bread. It is also used for the
seasoning of cooked or grilled dishes.
Olive oil is the only vegetable oil that can be consumed as
it is - freshly pressed from the fruit, without refinement
or adding chemicals. It contains vitamins E,A,K, D. The
beneficial health effects of olive oil are due to both its
high content of monounsaturated fatty acids and its high
content of antioxidative substances. Extra virgin oil
should have a free oleic acid acidity of no more than one
percent.Studies have shown that olive oil offers protection against heart disease by controlling LDL ("bad")
cholesterol levels while raising HDL (the "good" cholesterol) levels.
 
Here are some recipes you can make with extra virgin olive oil
   
Game produce Our area is reach in game and a lot of dishes are based on it.  
  A typical tuscan dish is wildboar, used for sauces, or stewed, eaten  
  alone or with polenta. In the farms you will find other kinds of game  
  such as pheasants, deer, thrushes We also reccommend cold cuts  
  and meat in olive oil. They are delicious.  
     
  Mushrooms and chestnuts  
     
In autumn people can enjoy a walk in the woods, to admire
the beautiful landscape but also to gather mushrooms and
chestnuts. And if you don't feel like walking you can taste them in
one of our farms, cooked in the traditional ways or with delicious
variations.
